Granola Bars

This is a modification of a recipe found here, but I’ve modified it some to add some flavors I really like.

Ingredients:

6 cups rolled oats

1/4 c melted butter

1tsp salt

1/4 c coconut oil

1 c brown sugar

1/2c honey

1/4c molasses (if you’re out of molasses substitute more honey)

3 tsp vanilla

1/2c ground hazelnuts or almonds

1/2 c rough chop hazelnuts, almonds or other nuts

optional 1/4-1/2c dried fruit (cut the size of raisins if using larger fruit)

Method:

350 degree oven

Toss oats, oil, butter and salt. Spread onto a sheet pan and toast 15-20 minutes. turn once or twice to prevent burning.

Reduce heat to 325 degrees

Heat sugar, honey and molasses over medium heat until combined. Stir in vanilla.

Toss oats and nuts, stir in sugar mixture, and optional fruit.

Line sheet pan with foil or grease with butter. Press mixture into sheet pan and bake until golden, about 20-25 minutes. Remove from oven and let cool. Remove from pan and cut.
