Black Eyed Pea Pate

For the vegans in the house.

Ingredients

  • 1 14 oz can black eyed peas
  • 1 shallot
  • 2 cloves garlic
  • olive oil
  • sherry vinegar
  • 1 spring fresh thyme, picked (or 1 tsp dried)
  • pinch red pepper flake
  • salt and pepper to taste

Method

  1. mince shallot and garlic, gently saute over low heat in olive oil until soft
  2. puree all until smooth
