Chicken Pie

It’s a bit more of chicken pie meets quiche. My husband asked for a pie this afternoon so he got a savory mishmash of what was in fridge and I do say I’m awfully excited for breakfast tomorrow.

I used the usual 321 ratio for the crust, layered feta, roasted cauliflower, caramelized onions, chopped roasted chicken, herbs, and topped it with three eggs whisked with some heavy cream. Instead of trimming the crust I folded it over like a crostata, which added to the loveliness of the whole thing.
