Pining for Summer

It’s a sure sign I’m done with winter when I crave pasta salad. Tasty homemade mayo, minced vegetables, and sliced olives are all key components. Combine all those with whatever pasta is on hand and voila, a little bit of summer.



  • 1 egg
  • 1T chopped garlic
  • 2T lemon juice
  • 1/2 tsp salt
  • 1/2 c grapeseed oil


  1. combine all, except oil, in a blender or food processor, pulse 30 seconds-1 minute
  2. slowly pour in oil until dressing becomes thick and creamy (if you pour too fast the dressing will not emulsify)

Pasta Salad


  • 1/2-1 c homemade mayonaise
  • 1 1/2 c dry pasta–penne, shells, rotini all work well
  • 1/4 c sliced olives (any type of pitted olive will do)
  • 2 stalks celery, finely chopped
  • 1-2 carrots, finely chopped
  • 1/2 c broccoli florets, cut into 1-2″ pieces (grate the stem and add it too)
  • 1/2 c frozen peas (if it’s actually summer, fresh peas are lovely)
  • any other vegetable that strikes your fancy, cut into 1″ pieces


  1. cook pasta according to directions on box (use lots of salt in the boiling water)
  2. make mayo (recipe above)
  3. chop vegetables as desired
  4. combine all in a bowl
  5. adjust seasoning with more salt, finely chopped fresh herbs, additional lemon juice or vinegar, and pepper
  6. chill and enjoy
