I used to be a vegetarian, my parents would always tell me how good beans are made with some ham. My skepticalness was based on the quality if the ham we bought, but now that I can access some really great ham I get it.

Green Pea Soup

1 ham hock or ham bone with some meat still attached
24 oz vegetable stock (make your own, it’s so worth it)
1 lb. split green peas
1/2 onion
1 1/2 tsp oil
2-3 celery stalks
2-3 carrots
1 Bay leaf
2 cloves garlic

Simmer hock in stock for 1 hour
Strain, set hock aside
Swear onion in oil, about 3 minutes
Add celery, carrots, and garlic. Continue to sweat 5 minutes more
Rinse peas
Add peas and stock to vegetables
Bring to a boil, lower heat and summer for 30 minutes
While it’s cooking, shred the hock, then add it to the soup at the 30 minute point
Simmer 30 more minutes, adding more liquid if necessary
Adjust seasoning to taste
