Banana Bread

Can’t you just smell it? So yummy. I like mine with almond flour…


Banana Bread


  • 1/2 c butter (softened)
  • 1 c brown sugar
  • 1 egg
  • 1 cup ap flour
  • 1 c almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • dash nutmeg
  • 3 bananas (the riper the better)
  • 1/2 tsp vanilla
  • 1/3 c buttermilk (whole milk or cream works too)


  1. preheat oven to 350 degrees F (375 if making muffins)
  2. prepare a 9×9″ pan with butter and flour or sugar, or line muffin tins
  3. combine dry ingredients
  4. cream butter and sugar together
  5. add egg, mix well
  6. add bananas, one at a time until well combined. add vanilla
  7. stir in dry ingredients, until just combined
  8. stir in buttermilk, be careful not to over mix (over mixing causes  a denser bread)
  9. pour into prepared pan, bake about 50 minutes, or until a toothpick comes out clean from the center (when I use my stoneware pan, it cooks faster). muffins take about 12-15 minutes depending on the size.
