This is my first attempt at a wild yeast leavened bread. It took four days to make it and in the end my husband had to bake it. I didn’t want to stay up all night tending it for the final stage (there are advantages to having opposing schedules!).
I’m going to be good and let it cool completely before slicing, four days was a lot if tending, might as well reap the best rewards from that.
Update, from later in the day…the bread was too dense, not inedible by any means, but not the correct texture. Next time I will allow more time for the final two proofs and see if that fixes the issue.
