After having the polenta, bacon cakes at Columbia City Bakery (if you haven’t eaten their bread you are really missing out on something delicious, http://columbiacitybakery.com/) I have been mildly obsessed with the search for the perfect corn cake recipe. Today I’m trying a blue corn, coconut flour recipe and I added grated cheese and Snake River Farm ham (only because I didn’t have any bacon on hand, as horrifying as that is). The result was not quite what I was looking for, but very tasty. I think I am getting close.
